Weekly Meal Plan 02-20-17
We have been super busy the last few weeks and even though we have not had time to plan and prep the way we would have liked to and share with our amazing followers, we did manage to still eat healthy and prep as we went. We both agree that not being fully prepped was difficult for us. I have been meaning to get this menu out on Friday but didn’t get to it. So hear we go. This weeks menu.

Turkey Egg Roll Bowl – I substituted Turkey for the pork.
Teriyaki Meatball Bowl – I used frozen turkey meatballs and kikkoman teriyaki sauce.
Egg Fried Rice – Cook the rice. Cook the eggs. Combine and add soy sauce. EASY!
- 1 cup basmati rice
- 4 eggs
- 3 tablespoons low sodium soy sauce
Blueberry Muffins – I use Betty Crocker blueberry muffin mix. Substitute unsweetened applesauce for the oil. Only use 1 egg and 3/4 cup water. Delicious!
Chunky Chicken Noodle Soup – I use my crock pot for this one. Place a whole chicken in around 8pm and cook on low overnight. In the morning take it out and let it cool and then de-bone. Use the chicken broth in the crock pot and add water to bring about 3/4 of the way to the top of the crock pot. Add chicken, crinkle carrots, onions and celery. Cook until veggies are soft. Add chicken bouillon for flavor, usually 2 cubes will do it. Salt and pepper to taste. Serve over egg noodles.

Love the simplicity of theses meals this week. We have a race this coming weekend so Friday night is our carb load night. Our spaghetti dinner is always our go to meal before a big race. We did meal prep today as well but I am going to blog about it tomorrow to keep this post short.
